RED LENTIL SOUP

INGREDIENTS

2 cups chicken broth
1 cup water
1/2 cup red lentil, rinsed
1 cup diced tomato or
1 tsp tomato paste
1 onion, diced
2 tsp oil
salt, pepper

  1. In a soup pan saute diced onions and tomato with oil until onion is translucent over medium heat. If you want to use tomato paste saute onion first for few min. and continue cooking adding tomato paste.
  2. Cook 2 more min. and add drained lentils with water and chicken broth to our pan. Bring to a boil. Cover and simmer about 45 min. Add salt and pepper to taste. Serve with lemon wedges.
Ozlem's Tip: If you want to make your soup richer to serve kids at home, add 1 carrot, 1 small potato and/or  garlic besides lentils to your soup. Puree with a hand blender or use food processor after it cools down aside. Add more broth if needed.
